Fuiche ;-)

Well, this is a very neglected blog. Sorry!. This is mostly because I am debating if it is the best way for me to put up recipes etc, as it seems very laborious to search through for past posts and partly because studying has really ramped up. It is an exciting time, thinking forwards to be being a qualified antenatal teacher and all that that might bring.

Anyway, I have loads of really good recipes to share, including a vegan quiche (or fuiche – fake quiche as we renamed it!) stolen from a wonderful website: http://mouthwateringvegan.com/2013/08/22/deep-pan-cheesy-veg-quiche/

I pretty much followed that recipe, apart from the base veggies, I used peppers, red onions, baby sweetcorn and celery. In the topping I only had a tiny amount of vegan cheese left so used nutritional yeast and mustard to help get the right flavour, and I had some asparagus to use so popped that on top. It set so well and everyone really enjoyed it. It was actually even better cold for lunch the next day and Jake was really chuffed to have his own mini ones in his lunch box (made from the leftover filling and pastry in a muffin tin).

I love recipes like this, take a real traditional, English meal and adapt it for a vegan lifestyle.

I also went for dinner to a good friends house this week and was touched at how much effort she went to to cater for my veggie ways, she made a Thai curry, which was fab, and kept the chicken separate so I could partake. She also did satay chicken, and I got satay vegetables (she even text me during the day to make sure she was right in not using fish sauce!). It was so lovely of her to want to respect my wishes and include me in things – thank you massively to her Image may be NSFW.

Jake has been having some issues with people eating meat, getting quite upset about it if he see’s it on TV etc. We are trying to teach him that everyone is different and that that is OK, but for a 6 year old who has come to the conclusion that eating animals is cruel and sad it is going to take some time to get his head round I guess. But we will continue to support him, and surround ourselves with as many other veggie/vegans as we can so he see’s we are not that strange (well about food anyway!).
